I have been remiss in my postings. The holidays and traveling have kept me from my posts but I’m getting back on that horse and here goes!
Beets and all things pickled are always present in our house. I keep a regular stash of them in our fridge to add to salads or as a side for that veggie in a pinch. Just use a 1-3 ratio of vinegar to water and then add a variety of bits to it- mustard seeds, a garlic clove, salt, sugar, a clove or two and maybe some fresh dill. Then there’s always the roasting (more roasting!) and the greens sauteed with a little olive oil and garlic……..
